I love Mexican, and I love meatloaf, so when I came across a recipe entitled,”Crazy-Good Turkey Taco Meatloaf,” I knew it was a match made in Mexi-heaven. The following is my rendition of this uber Mexi-licious dish!
Mexi Meatloaf Recipe (modified from Recipes and Survival Strategies for Guilt-Free Eating in the Real World by Lisa Lillien aka Hungry Girl Crazy-Good Taco Meatloaf
1 pound raw extra-lean ground turkey
1/4 cup reduced-fat shredded sharp cheddar cheese
1 15 oz. can low-sodium corn kernels
1/4 cup chopped peppers (green, yellow, orange, whatever you like!)
1/4 cup chopped onions
1/4 cup black beans, drained
1/2 cup salsa
1/2 packet of taco seasoning mix, dry OR my new favorite combo 1 teaspoon chili powder and 1/2 teaspoon cumin
Preheat oven to 375 degrees.
Cook peppers and onions for 3 minutes over medium heat in a pan sprayed with nonstick spray.
In a mixing bowl, combine onions and peppers with turkey, corn, and seasonings. Spread half of the mixture evenly into the bottom of a loaf pan (about 9″ x 5″) sprayed with nonstick spray.
Pour the salsa over the top of the loaf. Cook in the oven for 30 minutes.
Top loaf with shredded cheese. Return loaf to the oven and cook for another 15 minutes.
Makes 6 servings.
